The spiced lentil filling in these tacos makes a great vegetarian alternative to the usual ground meat. To be clear, my family eats our fair share of meat, but I like to include as many plant-based sources of protein in our diets as possible. I think it’s best both for our health and for the environment to go this route whenever possible. And frankly eating quality meat is expensive… the costs of organic chicken and wild salmon and grass-fed beef add up quickly!
So that brings me to lentils: a staple in our kitchen, they are packed with protein, quick to cook (and easy to find pre-cooked) and cheap, cheap, cheap (less than $2 for a bag with 14 servings!).
In this recipe I tossed the lentils with chopped walnuts for texture and a few spices for flavor, then added radishes and feta for a peppery-salty combo (plus avocados of course!). It comes together quickly and makes for a great taco night.
